Chocolate Chia Pudding

There has been alot of talk about Chia latley which is awesome that this little ancient seed is making a come back. Chia is the ancient superfood of the Aztecs giving them strength and endurance. Chia is packed with protein, fiber and antioxidants. It is the highest known plant source of omega 3 (especially needed for a healthy heart) it also contains omega 6 and is a powerhouse of vitamins and minerals.
Chia swells up much like tapioca when left for about 10minutes in liquid and once you have this gel the possibities are endless.....smoothies, soak it in juice and add fruit for jelly and puddings.
I have been popping the seeds in smoothies, putting them in a vegetable slice and also making chocolate pudding with the gel.........


The amount of liquid used to the amount of Chia will determine the thickness of the gel so feel free to add more liquid if you like a thinner type pudding.

CHOCOLATE CHIA PUDDING

1 3/4 cup of nut milk such as almond, you could also use soy, rice or dairy
2 tbs raw cacao
1 tsp vanilla essence
3 tbs maple syrup
1/3 cup chia seeds

- in a bowl whisk together the milk, cacao, vanilla and maple syrup until smooth
- add the chia seeds and set aside for 10 minutes or so for the chia to swell and then you will have a tapicoa like pudding full of goodness!!
- top with goji berries and cacao nibs for extra punch!!
